San Luigi Oil Mill
Frantoio San Luigi, founded in 1992 by Paolo Sabatini and now run together with his son Luigi, is a virtuous example of sustainable oil production in the Maremma. A pioneer in environmental commitment, since 2009 it has been 100% carbon free, using only renewable energy in the production process. The oil mill skilfully combines tradition and innovation: alongside the historic granite millstones, it operates a modern continuous-cycle plant to produce the highest quality oils. The production, which ranges from organic extra virgin olive oil to refined flavoured dressings, reflects the family's passion for the land and respect for the surrounding environment.
